This cheesy rice bake is oh so comforting and perfect for whipping up at the end of a long day, when the family needs a filling and balanced dinner, fast! The Instant Pot Duo Crisp makes this one pot meal a breeze, because you can pressure cook and then swop to the air fryer lid to finish off to glorious crispiness. Instant Pot Duo Crisp
Oven proof dish (between 16cm – 20cm diameter)

Ingredients:
1 Tbsp butter
2 Chicken Breasts, cut into cubes
2 Cloves Garlic
1 Small Onion
¾ Cup Tastic Bonnet rice
3/4 Cups Chicken stock, warmed
2/3 Cup Milk, warmed
2 Tsp Flour
400g Broccoli
1 Cup/225g Mature Cheddar
½ Cup/ 112g Mozzarella cheese (or more cheddar)
Oil-salt -pepper as needed
Method:
Cut your broccoli from the stem into bite-sized florets. Don’t waste the stems, they taste great! Cut your stems into 1/2cm thick slices.
Place 1 cup of boiling water into the inner pot of the Duo Crisp. Insert the metal trivet, add the broccoli on top and secure the pressure cooking lid onto the pot. Set to Pressure Cook for “0 Minutes” on “High”. Once complete, do a Quick Pressure Release and remove the broccoli and set aside.
Drain the pot, and set to Sauté on “more”. Add a drizzle of olive oil, then add the chicken pieces. Cook until golden on one side without turning, then flip and cook for 30 seconds more, before removing it from the pot. While the chicken cooks chop your onion and prepare your ingredients.
Once the chicken has cooked add the onion and cook for 3 minutes until translucent, stirring occasionally. Add the garlic, butter, and rinsed rice and sauté for 1 more minute to toast the rice in the butter. To the rice mixture add the browned chicken pieces, stock, and 1/2 of a cup of the milk. Add a few grinds of black pepper to the mixture and a generous pinch of salt.
Secure the pressure cooker lid. Select Pressure Cook, on High for 4 minutes. Once the time is up, allow the pressure to naturally release for 2 minutes. Then Quick Release the remaining pressure.
While this cooks, add the remaining milk to the flour and mix until it forms a smooth paste. When the rice is cooked add the paste to the pot. Select Cancel, and set the pot to Sauté on “less”. Cook the mixture for 2 minutes until the flour thickens the sauce, then add the broccoli and ¾ cup (170g) of cheddar cheese. Taste the seasoning, adding more salt and pepper as needed.
Remove the cheesy rice mixture from the pot, and place it into an oven proof dish (16 – 20 cm diameter). Top the cheesy chicken rice with the remaining cheddar and mozzarella, and lower the dish into the inner pot using a foil sling underneath. Secure the Air Fryer lid onto the Duo Crisp. Select the Broil (Grill) setting, at 204c, and cook the rice for 6-8 minutes or until the cheese is golden and brown.
Serve immediately.
