A "one pot wonder" Lamb Biryani using the Instant Pot Duo Plus. The magic trick is to marinate your meat this evening and layer your biryani tomorrow....

Ingredients:
3 cups Spekko basmati rice
(rinse until clear and par cook with Pressure Cook on high for 4 mins in the Instant Pot)
1 kg Lamb Cubes
1 cup fried onions ( 1/4 cup for the top)
1 cup boiled masoor (lentils)
6 potatoes (fried)
3 Tbl plain yoghurt
2 tsp chilli powder
1/2 tsp turmeric
2 Tbl tomato paste
1/4 cup lemon juice
3 Tbl biryani masala
2 tsp coriander powder
2 tsp cumin powder
3 cinnamon sticks
2 cardamom pods
Few peppercorns
Generous pinch of saffron steeped in 1 cup water (half to marinate the meat and half for the top)
Salt to taste
Half cup ghee or oil
Method:
Marinate the meat with the above spices (except masala) and ingredients overnight.
Set the Instant Pot to Sauté mode and when warming up place 1/2 cup ghee. Let it melt and then add your marinated meat. Cook the meat for 5 minutes stirring well. When sealed pour a tiny bit of water into the inner pot and scrape the bottom and sides well to make sure sure nothing is sticking to the bottom of the inner pot.
Set to Pressure Cook on High for 10 minutes. Allow a Natural Pressure Release for 15 minutes, then release remaining pressure and open lid carefully. Layer a few potatoes on the meat.
Mix half of the par cooked rice with the masala spices. Add half of the masala rice mixture in an even layer across the meat / potatoes. Add another layer of potatoes, and another layer of masala rice. Add the crushed fried onion and sprinkle lentils on top. Then top with the last of the plain rice. Add the 1/2 cup saffron water, fried onions, masoor and a few Tbl ghee. DO NOT STIR.
Set to Steam function for 15 minutes. Allow a 5 minute Natural Release, then release remaining pressure.
