Coconut Prawns

"When I bought an air fryer a year or two back, I bought the cheapest one I could find as I wasn't sure it would actually be for me. Well I can now safely say it IS for me. These coconut prawns turned out beautifully crisp and juicy, and cooks in just 10 minutes".

Ingredients:

15 King prawns

1/2 Cup flour

2 Tsp salt flakes

1 Tsp black pepper

1 Tsp garlic powder

2 Eggs

1/4 Cup coconut

1/4 Cup breadcrumbs


Method:

Prepare the prawns by removing the heads, then using kitchen shears, cut the shell down lengthwise to the tail. Remove the shell and legs, leaving the tail. Now use a sharp knife to cut along the centre of the back and remove the vein. Rinse under cold water and pat dry. 


Place flour, salt, pepper and garlic powder into a bowl. Place the egg into a second bowl and whisk, then place the coconut breadcrumb mixture. Place into the air fryer basket in a single layer and cook for 10 minutes at 200C.


Serve with dipping sauce of choice.
