Blueberry Cinnamon Rolls

The ultimate extravagance using blueberry jam to pack colour and flavour into these gorgeous rolls. Watch the rise from the Vortex ClearCook windows! Baking in an air fryer has never been easier! Use your Instant Pot to proof the dough to save time and effort. 
 
Prep time: 15 mins 
Cook time: 20 mins 
Serves 6 
 
Ingredients: 
3 cups flour 
2 Tbsp sugar 
1 packet instant yeast 
1 tsp salt  
1 cup milk, warmed 
1/4 cup butter, melted plus 1 Tbsp for glazing 
1 egg 


For the filling: 
1 cup extra fruit blueberry jam 
2 Tbsp cinnamon 


For the topping: 
1/2 cup medium fat cream cheese 
1 cup icing sugar 
1 Tbsp lemon zest 
Handful of fresh blueberries to serve 
 
Method:
In a large bowl combine the flour, sugar, instant yeast and salt. Make a well in the centre. 
Add the milk, butter and egg and mix until the dough comes together. 
Turn out on to a floured surface and knead the dough for 7-8 minutes until smooth. 
If you have an Instant Pot, set it to Yogurt mode and grease the inside of the inner pot. Place the dough inside the inner pot and cover with a cloth and allow to rise for about 1 hour or until double its size. 


In the meantime, mix the blueberry jam and cinnamon powder. 
Once the dough has risen, on a floured surface, roll the dough into a rectangle of about 36 x 40 cm (approximately 0.5cm thick) then spread the jam evenly over the top and all the way to the edges. Starting at the long edge, roll the dough into a log before cutting into 6 even portions. 
Place each roll, spiral side up into a well-greased 20cm thin-walled baking dish.  
Brush rolls with 1 Tbsp melted butter to glaze. Lightly cover and allow to rise for another 15 - 20 minutes. 
Turn on the Vortex Plus ClearCook setting to Bake at 160C for 20 mins. Allow it to pre-heat. 
Once ready, bake until golden brown and cooked all the way through. If it darkens too quickly, place a piece of foil over the top. Adjust temperature down to 150c and continue for 5-10 mins. 
To make the topping, combine the cream cheese, icing sugar and lemon zest with a whisk or beater.  


Allow the cinnamon rolls to cool slightly before spreading the topping over each. 
Scatter over fresh blueberries and enjoy! Serve warm.
