Serves 4
Ingredients:
1 lamb rack (7-8 ribs per rack), fat-trimmed
1 Tbsp olive oil
1/4 tsp salt & pepper
2 Tbsp dijon mustard
3 cups plain salt potato crisps
2 cloves garlic, crushed
1 Tbsp fresh rosemary
1 Tbsp mint
2 tsp dill
1 egg
For serving:
Mashed potatoes and roast vegetables
Method:
Turn on the Vortex Plus ClearCook, and set to Air Fry 180C and 15 minutes, allow it to preheat.
While it heats, rub olive oil to coat the lamb rack on all sides, season with salt and pepper.
Spread mustard over the back of the rack where the crust will go.
Pulse the crust ingredients - crisps, garlic and herbs - in a food processor until coarse breadcrumbs form.
Transfer to a bowl and stir in the egg.
Press firmly onto the lamb rack to cover the mustard and evenly coat.
Place the lamb rack, crust side up into the Vortex ClearCook basket and cook for 14 - 15 minutes until cooked to your liking (around 15 minutes is a medium finish).
Transfer to a chopping board and allow to rest for 5 minutes, covering lightly with foil.
When ready to serve, place onto a bed of creamy mashed potatoes and roasted vegetables.
