Prepare this delicious meal in a flash and cooked perfectly at the same time, thanks to the new Vortex ClearCook DUAL air fryer. Simply place the food in the two drawers, program each drawer to its specific time and temp settings, and push Sync Finish! In 25 minutes you’ll have the most succulent lamb chops and the crispiest roast potatoes!

Ingredients:
Potatoes
750g baby potatoes, halved
1 Tbsp olive oil
1 Tbsp chopped rosemary
salt and pepper to taste
Chops
6 lamb rib chops
1 Tbsp olive oil
1 Tbsp thyme leaves
1/2 Tbsp lemon juice
1 clove garlic, minced
1 tsp cumin seeds
1 tsp lemon zest
salt and pepper to taste
Sauce
50g fresh mint
5 rosemary sprigs
1/4 cup olive oil
2 Tbsp lemon juice
1/2 tsp chili flakes
salt and pepper to taste
To serve
250g tenderstem broccoli
Method:
On the Vortex Plus ClearCook Dual, set drawer 1 to Grill* mode at 8 min and drawer 2 to Air Fry at 200C at 20 minutes; press Sync Finish so both drawers finish at the same time. Press Start and allow preheating to commence.
For the potatoes toss all the ingredients together to coat. When drawer 2 is ready, add the potatoes and allow to cook, tossing halfway.
In the meantime, mix all the ingredients for the chops and coat them well. When drawer 1 is ready, add the chops and Grill for 8 minutes, turning halfway.
Blitz together all ingredients for the sauce to achieve a chunky consistency. When they’re done, remove the chops from the drawer.
Reset this drawer to Air Fry at 180C for 5 minutes and add the broccoli. Cook the broccoli while the chops rest, tossing through the left-over lamb spices in the basket.
Serve the chops with crispy roast potatoes, broccoli, and a drizzle of chilli mint sauce. Enjoy!
*Grill mode automatically sets the Vortex to the highest temperature 205C for best results.
