Vortex Stuffed Potatoes

These stuffed potatoes are the perfect appetizer, tapas dish or side dish to accompany anything from a roast chicken to a hearty stew.

Ingredients
4 medium potatoes
Salt & pepper
1 Tbsp Olive oil
1 Onion chopped
1 clove garlic crushed
6 Mushroom chopped
2 Spring onion chopped
1 Tbsp Parsley
½ cup Grated cheddar
5 Tbsp Butter
 
Method
·         Wash the potatoes and rub with olive oil, salt & pepper. 
·         Pierce the skin with a fork place in the Vortex tray. 
·         Bake at 180C for 10 mins turn halfway through cooking. 
·         In a pan/Instant Pot sauté the onions & garlic until soft. 
·         Add the mushrooms cook until soft. 
·         When the potatoes are cooked allow to cool slightly then cut in half. 
·         Scoop out 2 Tbsp of the potato and mix with the mushroom mixture. 
·         Add the herbs and check seasoning. 
·         Place a 1 Tbsp of butter onto each potato shell.
·         Place the filling in each shell and top with cheese. 
·         Return to the Vortex tray and bake at 180C for 3 mins. 
·         Serve with a side salad for a light lunch. 
·         Or as a perfect steak side dish.
