Winner chicken dinner! This meal is set to become a family favourite and will be ready on the table in just over 30 mins. Nothing beats the freshly baked bread rolls dripping with melted butter! You’ll bake the rolls and grill the chicken at the same time using the New Vortex ClearCook Dual air fryer!

Serves 4
Ingredients:
Quick Garlic Pull-apart Rolls
3 cups self-raising flour
1 cup full cream plain yoghurt
1/2 cup melted butter
4 cloves garlic, crushed
1/2 Tbsp chopped parsley
Pinch of salt
2 chicken breasts, halved lengthways
1/3 cup flour
1/2 tsp each onion powder and paprika
2 large eggs, whisked
1 cup breadcrumbs
1/4 cup freshly grated Parmesan cheese
1 tsp dried oregano
salt and pepper to taste
Cheats Marinara sauce
1 cup tinned chopped tomatoes
1 Tbsp olive oil
1 garlic clove, crushed
1/2 tsp each salt and dried basil
1/4 tsp ground pepper
1 cup grated mozzarella
fresh basil, for garnish
Method:
Start with the quick rolls: combine the flour, salt and yoghurt in a medium bowl and knead for 7-8 minutes until a smooth dough is formed. Cut into 8 balls and place in a greased dish that fits the Vortex Dual drawer. Cover with a cloth while the drawer heats to the correct temperature.
Prepare the coating sequence: place flour, onion powder and paprika in a shallow bowl. Place eggs in a second bowl and in a third combine breadcrumbs, Parmesan and dried oregano.
Turn on the Vortex Dual and set drawer 1 to Air Fry 180C for 12 minutes and drawer 2 to Bake at 180C for 20 minutes. Press Sync Finish and Start to commence preheating.
Season the chicken breast fillets on both sides. Coat one fillet at a time in the flour mix, then eggs and lastly toss in the breadcrumbs and press gently to ensure the crumbs are well adhered.
Add all 4 crumbed fillets to drawer 1 and cook for 7 minutes, turn half way through the cook time.
Add the rolls to drawer 2 to Bake.
For the cheats marinara, combine the ingredients in a medium bowl and use a fork to mash the tomato chunks and mix all the ingredients.
With 5 minutes left, open the drawer and top the crumbed chicken fillets with the sauce and grated mozzarella allow to cook until the cheese is melted.
Combine the melted butter, garlic and parsley in a small bowl and when the rolls are 5 minutes from the end brush over the top.
When all the cooking has ended, remove the chicken fillets and garlic rolls, brush over more garlic and herb butter and serve with a leafy side salad and garnished with basil.
