Delicious sticky coconut rice, just like your favorite Thai takeout joint. This recipe is incredibly easy, simply add the ingredients to a pot and forget about them while the instant pot smart rice setting does all the work! If you are making our Thai Green Curry to accompany this dish, crisp your tofu (or chicken) while the rice cooks.
Salt- This rice is lightly salted. Start by using ¼ tsp of salt in the recipe, and adjust the amount to your taste if you find it too mild when making the recipe again.
Get fancy - serve your rice garnished with coriander, and toasted coconut!

Ingredients:
½ tin coconut cream
1 cup jasmine rice
¼ tsp salt
Optional:
2 Tbsp desiccated coconut, lightly browned in the Instant Pot on the Sauté function, before cooking the rice.
A few sprigs of coriander for serving
Method:
Place your jasmine rice in a sieve. Wash it under running water until the water runs clear. Place the rinsed rice into the inner pot. Pour the coconut cream into a 250ml cup measure and top up the volume with water until you have 250ml. Add this to inner pot, along with the salt and stir slowly to mix.
Secure the lid and set to Rice program and change to “Less” by pushing Rice again. The Rice program will automatically adjust the time to the amount of rice / water. For this about, it should adjust to 10 minutes. Leave the instant pot to work its magic. Once the Instant Pot beeps, and finishes cooking, Quick Release the pressure. Allow the pin to drop, open the lid and then fluff the sticky rice with a fork.
Optional: Stir through your toasted coconut.
Place the rice on a serving dish, garnish with coriander if desired, and serve.
