The little black dress of your rice game, this easy recipe delivers, whatever the occasion. Ready in just 15 minutes this versatile side is wonderful paired with grilled meats, and an array of south American and southeast Asian dishes.

Serves 3-4
1 cup rice
¼-½ tsp salt, added to preference
1 ½ cup water
2 cloves garlic, finely chopped
⅓ cup chopped coriander
3 Tbsp cooking olive oil (or another neutral flavoured oil, like avocado)
1 lime
1-2 jalapenos, red chilies or smoked chili flakes for serving
Select Sauté and once the pot has warmed add in 2 Tbsp oil, and add the garlic. Cook until the garlic is golden, about 1-2 minutes, then add the water. Bring the water to a gentle simmer.
While the water warms, rinse the rice in a sieve until the water runs clear. Place the rice in the Instant Pot, and give it a stir, to remove any grains from the sides of the pot. Secure the lid.
Select the Rice pre-set and push to set to “less”. The display will read 8 minutes. Make sure high pressure is selected by pressing the pressure level button. When complete perform a quick pressure release.
While the rice cooks, zest the lime, and set the juice aside for later. Chop the coriander.
Once the rice has cooked, fluff it with a fork and place it on a serving platter. Toss through the lime zest, coriander and cooking oil. Taste the dish and add salt as desired. Finally toss through the lime juice (about 1-2Tbsp added to your preference) . Finish the rice with chopped chili if desired and serve immediately.
Lekka Leftovers: Stir fry a handful of tender stem broccoli, cut into bite sized pieces, along with some sliced red onion for 2 minutes in a screaming hot pan. Add chopped chili to preference (½ -1 ) and fry for a further minute. Add the cold leftover rice, fry for 2 minutes until toasted and warmed then add a beaten egg. Stir fry the mix together, then drizzle over soy sauce to taste, and if you have it at hand, sriracha or Indonesian sambal (can both be found at Woolworths)
