Ingredients:
1 Gammon (Uncooked)
2 Cups Chicken Stock
Glaze Ingredients:
¼ Cup Melted Butter
¼ Cup Honey
½ Cup Brown Sugar
1 Tbsp Dijon Mustard
Instructions:
1. Remove Gammon from original packaging, be sure to keep the netting on the Gammon and pat dry using a paper towel.
2. In the Instant Pot insert add the Chicken Stock and place the Gammon into the Instant Pot Insert.
3. Close the Instant Pot using the lid and set the vent to “Sealing”.
4. Set the Instant Pot to Pressure cook the Gammon on High Pressure for 15 minutes per 500g of Gammon. I cooked mine for 45 minutes because my Gammon weighed 1,5 kg.
5. Meanwhile, in a bowl, mix together the glazing ingredients and set aside to use later.
6. Allow the pressure to release naturally, then set the vent to “Venting” before opening the Instant Pot lid.
7. Remove the Gammon from the Instant Pot and remove the netting. Prepare the oven by turning on the grill option.
8. Using a knife, cut the thick skin off the gammon then score the classic diamond design through the remaining layer of fat.
9. Glaze the Gammon and place in the oven to grill for a total of about 10 minutes. Every few minutes, remove the Gammon from the oven and apply another layer of glaze until cooked to your liking.
10. Remove Gammon from the oven and allow to rest before slicing.
