Recipe serves: 6
Ingredients:
3 Tbsp cooking oil
2 Tbsp melted butter
1.5kg onions, sliced
2 Tbsp brown sugar
6-8 fresh Thyme sprigs
6 cups chicken stock
2 Tbsp Worcestershire sauce
2 bay leaves
Salt and Pepper
2 Tbsp corn flour, optional
Method:
Add cooking oil, melted butter, onion slices, and brown sugar to the Instant Pot. Mix until each onion slice is coated with the oil and butter. Cover the Instant Pot with the lid. Set the pressure valve to “Sealing”. Set the Instant Pot to Pressure Cook for 5 minutes. Release pressure once Pressure Cook is completed and remove lid.
Add fresh Thyme to the onions. Set Instant Pot to Sauté setting and cook onions for 20 minutes until caramelized and brown. Stir constantly to avoid the onions burning at the bottom. Add chicken stock, worcestershire sauce, Bay leaves, salt, and pepper to the onions. Stir soup together until combined. Cover the Instant Pot with the lid. Set the pressure valve to “Sealing”. Set the Instant Pot to Pressure Cook for 5 minutes. Release pressure once Pressure Cook is completed and remove lid.
Optionally, to thicken soup: In a bowl, mix corn flour with equal amounts of cold water until dissolved. Add corn flour slurry to soup and heat through using the Sauté functionality until your desired consistency is reached.
Serving Suggestion:
Cheesy French Loaf
Cut half a French Loaf into slices on the bias to get larger slices. Spread Olive Oil onto one side of the toast, add grated white cheese to each slice and place it on a baking tray with the oiled side facing upwards. Place in an air fryer for 5 minutes at 180 degrees or until the cheese has melted and bubbly.
Dish up your soup and place the cheesy toast on top.
