Ingredients:
1 1/2 cups soy milk, warmed
1 packet (2 1/4 tsp) instant yeast
1/4 cup castor sugar
1/3 cup margarine, melted
4-5 cups all purpose flour
1 teaspoon salt
Vegan caramel:
3/4 cup margarine, melted
1 cup packed light brown sugar
3/4 cup castor sugar
1 tablespoon ground cinnamon
Pinch of salt
Glaze:
1 cup powdered sugar
2 tablespoons coconut milk
1/2 teaspoon pure vanilla extract
Method
1. Grease a round bundt pan with nonstick spray. Place the soy milk in a microwave safe bowl and heat for about one and a half minute until lukewarm.
2. In a bowl, add in the warm milk, yeast and sugar. Let it curdle before adding in the melted vegan margarine, 1 cup of flour and salt. Here you can use a dough attachment or make use of a spatula to combine the dough.
3. Scrape down the sides of the bowl, and add 3 more cups of flour, beating or kneading the until the dough comes together and starts to pull away from the sides of the bowl. Touch the dough, if it's still quite wet and sticky, add an additional 1/2-1 cup of flour, until you have a slightly sticky dough.
4. Knead the dough for a few minutes more on a lightly floured surface.
5. Lightly grease a large bowl with oil and place the dough in the bowl. Cover, allow it to rise, until double in size.
6. Remove the dough, using a knife, cut the dough into about 50-60 small pieces.
7. Place all of the vegan caramel ingredients in a saucepan and bring to a simmer, let the sugar
dissolve until the caramel starts to thicken. Takes about 10-15 minutes.
8. Pour about 1/2 of the vegan caramel in the bundt pan, roll the balls and place the dough in the pan, brush on the last bit of the sauce, sprinkle on more cinnamon sugar and place in the Instantpot.
9. Place on the air-fryer lid, switch to bake at 180 degrees Celsius for about 20-25 minutes, check every now and again so it does not burn.
10. Remove the monkey bread, flip over if you like of just slip it out.
11. Whisk all of the glaze ingredients together in a bowl. Drizzle over the monkey bread.
