Air Fryer Chicken and Spinach Lagan

Looking for something different and savoury? Try this amazing, easy to make Chicken and Spinach Lagan.

 

Recipe by Mariam Jakoet

 

Ingredients:
2 cooked chopped chicken fillets
1 finely chopped medium onion
2 tsp garlic/ginger paste
2 cups of finely chopped spinach
1/2 bunch chopped coriander (30g punnet)
2-4 chillies finely chopped
1 cup cake flour
1 cup pea flour
1/2 cup taystee wheat (or semolina or maize meal)
1 tsp Leaf Masala (or any curry powder)
1 tsp ground coriander
1 tsp ground cumin
2 tsp salt
3 tsp baking powder


Wet mixture
1 cup milk
1/2 cup oil
4 eggs

1 tin sweetcorn


Method:
Mix your dry ingredients, except your baking powder. Add your wet mixture to your dry mixture. Stir in 1 can of sweetcorn. Add in your baking powder and mix.
Pour your batter into a greased baking dish. You will have some batter left, just enough to make 6 muffins with it.


Baking instructions:
Into your Versazone
Baking dish - 160C for 40 minutes
Muffin pan - 160C for 20 minutes


Remove from the air fryer and cool for 10 minutes before cutting.


Muffins can be cooled and frozen for those busy days.
