A Cape Malay sweet treat :
“Boeber is a traditional Cape Malay sweet milk drink made with vermicelli, sago, sugar and flavoured with cardamom, stock cinnamon and rose water. The drink is traditionally served on the 15th night of Ramadan to celebrate the middle of the fast, for those who have completed the first 15 days of fasting. They are also known as people who are “op die berg” (or have reached the summit).” (Wikipedia).
Ingredients:
20g sago soaked in 50ml water
40g vermicelli slightly broken into smaller pieces
1 1/2 tsp butter
3 cardamom pods split open
2 cinnamon sticks
1/4 tin condensed milk
10ml rose water
2ml vanilla essence
1 litre milk
1/2 cup of water
Switch your Instant Pot to Sauté mode. Add your butter, cardamom and cinnamon. Let them brown a bit. Add in your vermicelli and let that come to a golden brown colour (Remember you can adjust the level of heat on Sauté mode by pushing it again. It changes from Less to Normal to More. You can switch between them.) Add in the 1/2 cup of water.
Let the water start steaming before adding in your milk, condensed milk, soaked sago and vanilla essence. Give it a stir and make sure nothing is sticking to the bottom of the inner pot.
Secure the lid and move the valve to sealing position. Press ‘cancel’ on your Instant Pot. Press ‘Pressure Cook’, set timer to 5 minutes. Do a Natural Pressure Release for 5 min.
Stir in your rose water. Let it stand for 5-10 min to thicken up some more.
Serve topped with toasted almonds or slivered pistachios.
