Roast Chicken with Salad

I made this delicious spicy yoghurt chicken which literally took 13 minutes in my Vortex Plus Air Fryer, enough time for you to prep the rest of your bowl and the dressing, check out the chicken recipe below as well as what I included in the bowl and the dressing".

Roasted Spicy Yoghurt Chicken


Ingredients:
4 chicken fillets, slit horizontally
1 cup plain yoghurt
3 cloves garlic, crushed
1 teaspoon hot mustard 
2 teaspoons peri peri Chilli seasoning 
Salt and pepper to taste
Juice of half lemon
Handful of fresh coriander, chopped
2 tablespoons olive oil


Method:
In a bowl, add all the above ingredients, mix and toss the chicken fillets so they’re fully coated.
In the air fryer, bake the chicken fillets for 13 minutes on 175C, basting with the remaining marinade every 5 minutes. When cooked through, remove from the air fryer and prep them for the bowl by slicing each chicken fillet.


Ingredients for the bowl:
Cous Cous, steamed with salt, pepper and olive oil
Red cabbage, sliced
Rosa tomato’s, quartered
Grilled corn kernels
Lettuce
Avocado, sliced and topped with guacamole seasoning
Spicy Yoghurt Chicken (prepared as above)


Salad dressing ingredients:
Olive oil
Lemon juice
Salt and pepper
Chilli flakes
Mix the above together then drizzle over the assembled bowl.

 

Garnish with chopped spring onion & coriander
