"4-in-1 Air Fryer Cookie Traybake. One batch of cookie dough baked into 4 different flavours, in the same traybake tin and in the air fryer! This is a sharing dessert I make so quickly and easily in my Instant Vortex Plus VersaZone Air Fryer. The recipe for this giant sharing cookie is eggless and can be customised with any add-ins you like. I’ve gone with 4 house faves for the cookie flavours: S’MORES • CHOCOLATE & PEANUT • CORNFLAKES & CARAMEL • PARTY JAMMY BISCUIT".

Ingredients:
125g unsalted butter, softened
125g light brown sugar
50g caster sugar
2 tbsp hazelnut cream
1 1/2 tsp vanilla extract
1 tbsp warm water
225g plain flour
1 tsp cornflour
1 1/4 tsp bicarbonate of soda
1/4 tsp salt
S’mores flavour add-ins:
2 tbsp milk chocolate chips
2 tbsp mini marshmallows (I used veggie ones)
Peanut & chocolate flavour add-ins:
2 tbsp candy shell-coated chocolate
2 tbsp roasted salted peanuts
Cornflake & caramel flavour add-ins:
4 tbsp cornflake cereal
5 soft caramels, cut into small pieces
Jammy party biscuit add-ins:
1 tbsp colourful sprinkles
4 small jammy biscuits
Method
1. In a large bowl, beat together the butter and sugar until very light and fluffy, about 5 minutes. Add the hazelnut cream, vanilla extract and warm water. Continue to beat for 2-3 minutes.
2. Add the flour, cornflour, bicarbonate of soda and salt. Fold with a spoon until the mixture forms a soft dough.
3. Divide the dough into 4 equal pieces. Grease and line a baking tray (20 cm x 25 cm x 5 cm) with baking parchment.
4. Incorporate the add-ins to each portion of cookie dough, except for the jammy biscuits.
5. Press the portions of cookie dough into each corner of the tray, allowing them to meet at the edges so they can bake into each other. Press the jammy biscuits into the sprinkle cookie dough, taking care not to break them. Decorate the other flavours with extra cookie add-ins if you like. Cover and refrigerate for 20 minutes.
6. Meanwhile, pre-heat the Instant Vortex Plus VersaZone Air Fryer, on Bake mode, cooking at 170ºC for 15 minutes.
7. Uncover the cookies and place the tray into the pre-heated air fryer. Remove the cookies at
12-13 minute for soft-baked cookies, or cook for the full 15 minutes if you like them a little more golden and crunchy. Note that they should still be soft to the touch when you remove them from the air fryer. They’ll firm up as they cool.
8. Allow the cookies to cool for at least an hour before cutting into squares. You don’t need to wait if you’re serving it as a sharing hot cookie pudding.
