"Mongolian beef was so good you’ll never have to buy it again. This recipe was so quick and easy with the Instant Pot Pro smart cooker. I paired mine with coconut rice but I’m definitely pairing it with noodles next time"

Ingredients:
800g tenderised steak, cut into strips (what’s important is that you cut your meat at an angle and
not straight down)
4 tablespoons oil
1/2 cup maizena/cornstarch
2 teaspoons crushed garlic
1 teaspoon grated ginger
1 tablespoon rice vinegar
1 teaspoon crushed green chillies
1 cup light soy sauce
1/2 cup brown sugar
1/2 yellow pepper sliced
1/2 red pepper sliced
1/2 green pepper sliced
Method:
Add your steak to a bowl and sprinkle maziena/cornstarch over leaving aside 1 teaspoon for
later, to make a slurry to thicken sauce. Mix well. Allow meat to sit with cornstarch for a few
minutes. Place your Instant Pot Pro pressure cooker onto sauté mode. Add in your oil. You will now
sear the beef for a few minutes, this will have to be done in batches so you don’t overcrowd the
pot. Once done do not be tempted to wash out the pot. During cooking the bits from the bottom
will remove from the base and give your food that extra flavour.
Add in your vinegar, ginger, garlic, soy sauce, green chillies and sugar to a bowl. Mix well.
Now add all your meat back into the pot, pour the sauce over, 1/4 cup water and mix. Close
your pot, place onto the beef settings and pressure cook for 10 minutes making sure the seal is
closed.
When done release the pressure. Add in your sliced peppers. Make a slurry with your
maziena/cornstarch and place back onto sauté mode for 5 minutes. Check seasoning. I didn’t
add salt because of the soy sauce, you may prefer extra.
Serve with rice/noodles, garnish with sesame seeds and spring onion.
