We're always looking for lunchbox ideas, and why not pulled beef with Tacos or on bread? This pulled beef recipe is a perfect lunchbox idea that your family will enjoy!
Ingredients:
1 kg roast beef
2 tbsp garlic infused olive oil, divided
1 medium-sized onion, diced
4-5 cloves garlic, minced
Handful fresh coriander, roughly chopped
Seasoning (mix all ingredients in a small bowl):
½ tsp salt
1 tbsp pepper
1 tbsp paprika
2 tsp smoked chili seasoning
Beef stock mixture (mix all ingredients):
1 chili beef stock cube dissolved in 1 cup boiling water
½ cup coke
1 tsp dried mixed herbs
1 tbsp tomato paste
1 tbsp soy sauce
Method:
Season the beef with mixed seasoning then coat with 1 tbs olive oil, rub gently until well coated. Cover and refrigerate for at least 60 minutes or overnight for best results. Set the Pro on sauté function, and add a tsp of olive oil. Once hot, sear the beef on all sides to lock in the juices 1-2 minutes per side. Remove the beef and sauté onions until fragrant. Add tomato paste and stir for a few seconds then add garlic (reserve 1 tsp).
Using the ‘pressure cook/manual’ function at high, return beef into the pot, pour in the stock mixture, and pressure cook the beef for 45 minutes. Release pressure, remove beef from the pot onto a cutting board, roughly slice or shred with a knife and return to the pot. Further shred the beef in the Instant Pot sauce with two forks. Continue to pressure cook for a further 20-30min or longer depending on desired tenderness.
Taste and adjust seasoning by adding, salt and/pepper. Mix in remaining garlic and coriander.
Serve and enjoy with:
* Mashed potatoes
* Tacos
* Use as stuffing for baked potatoes
Note:
* Use beef whole or cut into sizeable chunks for maximum flavor and reduce cooking time
* To thicken sauce, mix in runny corn flour and water mixture –1 tbsp at a time.
