These crunchy nuggets of nutty goodness are made in the new Vortex Plus Air Fryer using its brand new dehydrate function (super snazzy) and they came out so nicely! Sweet, snappy and an absolute treat with a cup of coffee!
Makes ±16 biscottis
1 cup all-purpose flour
1/3 cup brown sugar
1 1/4 tsp baking powder
1/4 tsp salt
1 egg
2 Tbl maple syrup
2 Tbl melted unsalted butter
1/2 cup chopped pecan nuts
1/2 cup chopped pistachios
1/4 roasted coconut slivers or desiccated coconut
DIRECTIONS:
1. Line the air fryer basket with baking paper then add the nuts & air fry them at 148°C for 6 mins.
2. Whilst that is happening add all the dry ingredients to a mixing bowl, then add in all the wet ingredients. Mix until well combined.
3. Add the chopped nuts & coconut then mix the dough by hand before shaping it into a ball.
4. Place the ball-shaped dough down on a counter & using the palm of your hand start to flatten it out into a rectangular shape that is about 1/2 inch thick. Place that into the Air fryer and fry it 180°C for 15 mins. It'll be golden brown.
5. Remove your biscotti log from the fryer basket & let it cool for a few mins before gently cutting it into 3/4 inch wide slices.
6. Place all the pieces back into the basket then dehydrate them for 2 hours at 79°C.
7. Once done, take them out, cool them, then dip a 1/4 of each biscotti into melted white chocolate :) Enjoy!
