Strawberry Scones baked in an air fryer. Watch through the ClearCook window as your scones turn a beautiful honey brown. These baked treats are ready in just 20 minutes. Finish with a drizzle of icing and chopped fresh strawberries.

Ingredients:
2 cups flour
1 Tbsp sugar
1 1/2 tsp baking powder
1/2 tsp bicarbonate of soda
1/4 tsp salt
1/4 cup unsalted butter, cold and cut into cubes
3/4 cup buttermilk
1 cup chopped strawberries
1 large egg, for egg wash
For the glaze
1 1/2 cup icing sugar
2 Tbs milk
1/2 tsp vanilla extract
Method:
In a large bowl, combine the flour, sugar, baking powder and salt. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles breadcrumbs. Combine the milk and vanilla extract and pour into the flour mixture, using a wooden spoon to bring the mixture together to form a dough. Do not over mix. Gently fold in the strawberries.
Turn out the dough onto a floured surface and using your hands press the dough into a circle about 2cm thick. Do not handle it too much. Cut the dough into 8 triangles and transfer to a tray and place in the fridge for 10 minutes.
Turn on the Vortex Plus ClearCook, set to BAKE, 180ºC, 12 minutes. Allow to preheat, then add the scones. While the scones are baking, combine all the ingredients for the glaze and drizzle over the cooled scones.
