Ice Tray Spinach and Feta Pastry Bites in and Air Fryer

Savooury Ice Trays

Impress your guests with these super crispy spinach and feta bites - made in ice trays for an easy and fun twist.

Ingredients:
3 cup chopped spinach, drained and squeezed of excess liquid
100g feta, crumbled
Salt
Pepper
Puff pastry
1 egg lightly beaten 
 
Method:
Roll out the cold puff pastry on a floured surface.
Lightly press the pastry into an ice cube tray.
Rinse the spinach and place in a bowl cover with cling wrap and microwave for 1 min.
Allow to cool slightly and squeeze to remove all the liquid.
Crumble the feta into the spinach and season with salt & pepper.
Spoon into the pastry lined ice cubes.
Brush around each cube with egg wash.
Top with puff pastry and press around each cube to seal.
Place in the freezer for 15 mins.
Turn out on to the Vortex / Duo Crisp trays.
Brush the top of each cube with egg wash.
Bake at 160ºC for 12 mins.
Turn after 8 mins to ensure the pastry is fully cooked.
Carefully remove from the Vortex and cut into cubes and serve.
