Air Fryer Banana Bread

Vortex Plus Banana Bread

2020 was the year of banana bread! So we created an air fryer version! It’s soft, moist and delicious. Lather with your favourite nut butter or butter and honey!

4 - 6 (Makes 1 20 x 20 cm banana bread)


Ingredients:
 
3 very ripe, medium bananas (±285g)
100g / ⅓ cup maple syrup
65g / ⅓ cup coconut oil, melted
2 extra-large eggs
60ml / ¼ cup milk
1 tsp vanilla extract
 
225g / 1 ½ cups flour
1 tsp baking powder
1 tsp ground cinnamon
Pinch sea salt
 
50g dark chocolate, roughly chopped
50g pecan nuts, roughly chopped
 
Method:
 
Grease a 20 x 20cm baking tin.
 
Mash bananas in a large bowl.
Add the maple syrup, coconut oil, eggs, milk and vanilla extract. Whisk well.
 
In a separate bowl combine the flour, baking powder, ground cinnamon and salt. Whisk.
Add the dark chocolate and pecans and mix well.
 
Pour the wet ingredients into the dry ingredients and mix together.
 
Pour the mixture into the prepared tin.
 
Select Bake for 30 minutes at 160˚C.
Remove the banana bread from the tin, return it to the Vortex’s inner basket and select Bake again at 160˚C for another 5 minutes.
 
Allow the banana bread to cool before slicing and serving.
