Ingredients:
1 cup full cream yoghurt
1 lemon juice
2 tsp ground turmeric
2 Tbsp garam masala
1 Tbsp ground cumin
6 - 8 pieces skinned chicken thighs, boneless
80g butter
15ml oil
1 onion, diced
4 garlic cloves, minced
2cm of ginger, peeled and minced
1 cinnamon stick
2 large tomatoes, diced or 1 tin of chopped tomatoes
1 birds eye chilli
¼ - 1/2 C cream (for after pressure cook cycle)
To serve; a handful of toasted flaked almonds, chopped dhania and paratha
Method:
In a large bowl, mix together yoghurt, lemon juice, turmeric, garam masala and cumin. Place chicken in marinade, coat well, cover and marinade for a minimum of 1 hour up to overnight.
Set the Instant Pot Pro to Sauté over medium heat. Add oil and butter and melt till foaming. Cook onions until translucent. Add garlic and ginger and cook.
Add the cinnamon stick, tomatoes and chiles. Add the chicken and marinade to the inner pot then set Pressure Cook on High for 5 minutes. Do a Quick Pressure Release, then open lid and stir in cream.
Serve with basmati rice and paratha. Garnish with almonds and dhania.
