Reverse Sear Air Fryer Steak

Thanks to Mariam from @cooked.inc for teaching us how to do the famous Reverse Sear Steak!

 

700g ribeye (thickness 13mm)
Steak at room temp
Pat it dry with roller towel
1 tbsp of olive oil
Season with sea salt and cracked black pepper

Put your steak into your Instant Vortex Air Fryer (no need to pre-heat).
Set your temp for 82 degC.
Set your timer for 50 min (if your steak is thinner, reduce time to 40 min. If you like a
medium rare, then also reduce to 40 min).
Once time has elapsed remove from air fryer.


(tip - this prep can be done ahead of time and you can sear before eating)


Get a pan (or your Instant Pot using Saute) searingly hot. Place your steak into the pan. Leave it for 2-3 min until it forms a crust. Flip it. Cook for another 2 min. 


Optional - brush with basting sauce or finish with a knob of garlic butter. Let it rest for 8 min and then slice.


Using this method you never get that grey wall (next time check a conventionally cooked
steak - look for the greyness).


Sprinkle with flakes of sea salt.
