Ingredients:
3 chicken livers
1 potato
1 large carrot
1/2 leek
1/2 cup sliced mushrooms
Butter or oil for frying
Directions:
Peel the potato and slice the leek, carrot and potato into pieces.
Place the trivet on the bottom of the Instant Pot inner pot and add 1 cup of water.
In an ovenproof bowl add the chopped potato, carrot and leek with 1/3 cup of water, place on top of the trivet.
Turn on the Instant Pot to “Steam” and select 15 minutes. When the timer ends, quick release by turning the steam release to the venting position allowing the steam to escape, the valve will then drop and the lid will unlock, press “Cancel”.
Clean and dry the inner pot and turn the Instant Pot on to “Saute”. Heat butter or avocado oil in the pot then add the livers and mushrooms and fry until fully cooked.
Scrape the livers and vegetables into a blender and puree until a smooth consistency, add the vegetable water or chicken stock if needed for a smooth consistency.
